Banana Chocolate Chip Bread

I love being *that* Mom, the Mom who makes cookies, muffins, breads all home made for her kids and family. I like the smell that takes over the house. I like cutting a piece of banana bread and seeing the steam rise and the chocolate chips melted. I like using my own ingredients and knowing exactly what’s in the food I am serving my kids.   On occasion I do buy pre made cookies, sweets and I definitely buy bread, crackers, bagels, etc. I don’t have that much time!  This loaf was gone in my house less than 8 hours after I made it!  Everyone loved it! It’s so easy to make and would be a great gift for a hostess or for a holiday pot luck!

Chocolate Chip Banana Bread (recipe adapted from Rachel Ray)

Ingredients
1/4 cup vegetable oil
1 1/2 cups flour
1 cup sugar
1 tsp baking soda
1/2 tsp salt
2 eggs, lightly beaten
3 bananas mashed (1 cup)
1 cup chocolate chips

Directions:
Preheat the oven to 350F.  Grease and flour a loaf pan.

In a large bowl, whisk together the flour, sugar, baking soda and salt.  Mix in the oil, bananas and eggs.  Stir in the chocolate chips (don’t overmix!) and pour into the prepared pan. Bake until a tooth pick interested in the center comes out clean, about 50-70 mins (all ovens are different, my loaf took approx. 50 minutes)  Cool in the pan for 10 minutes, then turn out and cool on a wire rack.  ( I had a bit of batter left over so I was able to make a few mini muffins!)
